Salmon and Avocado Burger With Sweet Potatoes Recipe
An easy, healthy recipe that is a great option for Lunch or Dinner. Enjoy with a side of Salad!
METHOD
Wash and slice the Sweet Potatoes, and place them on a baking tray. Lightly oil and season.
Bake in the oven for 30 mins at around 180°c.
Steam and bake the Salmon in a baking paper wrap (see here) with a touch of water added. Place the Salmon in the oven, and bake for 12-15 minutes.
Meanwhile, mash the Avocado, Chilli flakes, Extra Virgin Olive Oil and Lime Juice together in a bowl.
When the Salmon and Sweet Potatoes are cooked, assemble the burger. Lightly toast the burger bun on each side, and ass mashed Avocado, Salmon and Spinach leaves. Add the Sweet Potatoes on the side and garnish with Salad of choice.
